STORY
Panama Arango — the neighbour of Totumas
1. Buying story
We took a third of everything Arango produced this year.
There was one reason. This farm sits right next to Totumas.
Totumas is the hardest farm in Panama to get hold of right now. Because of that, a great many people have never tasted what this terroir does — not even once.
So I looked next door. That is how I found Arango.
Totumas being so hard to get, I went and dug up its neighbour.
As far as I know, this is the first year the farm has sold green coffee at all. Certainly the first import into Korea. This year’s crop was split between Taiwan, China and us.
My first impression on the table was elegance and cleanliness.
That is exactly the line I have been chasing all year — not coffees that explode with aroma and acidity, but coffees that carry the nuance of terroir and variety with poise.
On that count, Arango was the best choice I could have made.
2. Geisha Natural
Natural means drying the whole cherry, so how far fermentation travels during drying is a difficult thing to control.
A little too long and you get alcohol and vinegar. That is the smell you meet so often in cheap Geisha.
Arango’s Geisha has none of that over-fermentation. The processing is finished with real delicacy.
It feels less like the result of technique than of something fortunate.
Mango and bergamot pass through, faintly. With the roast dialled in, I think there is 92–93 point potential here.
That is my own cupping note, of course, not a competition score.
3. Caturra
What I personally loved was the Caturra.
Here you can taste the high-water mark of Panamanian varietals that I have kept pointing to all year.
First, there is florality in a Caturra. It is not common for flowers to come through this clearly in this variety.
On top of that sits a juicy texture and an acidity you would expect from Geisha, and the combination is genuinely charming.
The processing is identical to the Geisha: finished delicately, falling away clean with no heavy fermented aroma. This is 89–90 point flavour.
Caturra is reasonably priced enough that we prepared it in larger formats too.

It is not Totumas. Totumas was simply too hard to get, so we went and found the farm next door.
