STORY
Buying Story
Lost Origin is always one of the hardest coffees to get hold of.
They don't farm. They buy cherry from growers across Panama and finish the coffee with brewing technology. That makes it expensive, and it makes the volumes scarce.
What you get in return is precision. Sometimes it feels as though they lift the terroir of a region and the character of Geisha itself up a level. Perhaps that is why you see their coffees on competition tables so often.
These two lots were, in fact, the coffees we had selected for competition. And they taste strikingly different from one another.
Dinu is perfume with tropical fruit layered over it — genuinely spectacular. I suspect more than a few competitors would have called it their comp coffee on the first sip.
Bura is the louder of the two. Strawberry and cherry push through with real force.
What we had actually planned was to blend them into a competition lot. 70% Dinu, 30% Bura. Ha.
If that sounds like your kind of thing — buy both and blend them yourself.
Farm Story
Lost Origin is a coffee processing laboratory in Panama City. It was founded in 2023 by craft brewers Franz Saimetz and Andy Tifalos, and sits above the Casa Bruja brewery. They call themselves fermentation geeks.
They run no farm of their own. Ripe cherry comes from partner farms in the Chiriquí highlands, carried to Panama City overnight in refrigerated trucks. From there it is their territory: yeast and lactic-acid bacteria borrowed from brewing are selected and inoculated into the cherry, then fermented in stainless tanks under controlled temperature and pressure. Drying happens in a HEPA-filtered room with humidity and temperature held in range.
The competition results speak for themselves. They placed in the Geisha Washed category at Best of Panama 2023, and the coffee Martin Wölfl used to win the 2024 World Brewers Cup was a Geisha processed by Lost Origin.
The same Geisha becomes an entirely different coffee depending on the strain and the fermentation. Dinu and Bura are the two coffees that show you that difference.
